PepsiCo seeks an innovative technology capable of evaluating potatoes for either internal defects or sugar content. A process capable of combining both analyses would be ideal.
In order to increase the efficiency of our potato processing lines, PepsiCo is interested in technologies capable of evaluating, in a non-invasive manner, potatoes for their sugar content and for possible internal defects such as hollow-heart, green internals, stones, etc.
The ability to detect these attributes in whole/un-sliced potatoes will allow PepsiCo to deliver a higher quality potato chip to its consumers. For example, by removing potato defects prior to slicing and frying, the energy and cost associated with converting a defective potato into a defective fried potato chip will not be wasted. Furthermore, by knowing the potatoes’ sugar content prior to frying, the specific ‘fry profile’ (e.g. oil temperature/dwell time) can be optimized for the specific potatoes being fried.
PepsiCo is interested in technology(s) that meet the criteria for one, or both, of the below-described sensors. For example, a technology that can meet the must-have criteria for the sugar sensor, but not for the defect sensor, is still of interest.
With the exception of the technologies described below, PepsiCo is interested in any technology capable of reaching the performance goals set forth here.
Technologies that have been previously investigated are listed below. Significant improvement beyond PepsiCo’s current understanding of the technologies capabilities would be required to pursue any submission in these areas. Data collected on actual potatoes is an excellent way to demonstrate “significant improvement.”
