Description

Fazer, one of Finland’s largest food companies, is seeking technologies which can capture CO2 or CO2 and ethanol that is currently being released from their bread making process. Possible solutions include those that enable these gasses to be captured from air and stored until further use.

Background

Fazer is one of Finland’s largest food companies with bakery plants located across Northern Europe. Every year the bakery industry releases millions of kilos of CO2 into the atmosphere during the bread making process. Since sustainability plays a vital role for Fazer, they have set ambitious goals to find solutions to reduce greenhouse gas emissions.

In the normal bread making process, both CO2 and ethanol are released. In theory, 1 kg of wheat dough yields 10g of CO2 and 10g of ethanol. Fazer’s objective is to find solutions that enable them to capture these gasses in their current baking process. Ideally, the technology will allow capturing of both gasses simultaneously, but Fazer is also open to solutions that capture only the CO2 or only ethanol at this stage.

Key success Criteria
  • Captures either CO2 or ethanol, preferably CO2 + ethanol simultaneously from the bakery exhaust gasses
  • Technology should allow reuse of the stored products derived from the gasses
  • Can be implemented into existing bakery process: exhaust pipes from proofing or baking
  • Mature solutions TRL>4 are preferred (Technology validated in a laboratory environment)
  • After development, the required amount of energy to convert the gasses should be kept to a minimum

 

Possible Approaches
  • Technologies may refer to, but are not limited to:
    • Process to capture CO2 from air
    • Process to capture ethanol from air
    • Electro-chemical solutions that can utilize the heat produced from baking process
