Suntory is looking for technologies, methods or models for microbiological risk assessment that can qualitatively and quantitatively detect, at an early stage in the product’s life, the various microbial signals which potentially occur and contribute to the product’s degradation.

 

サントリー社は、様々な異なる培地・環境下に植菌されることで微生物が発するシグナルを定性・定量的に分析でき、微生物リスク評価に応用できる技術を求めている

 

Background

In general, it takes several months for microbiological risk assessment in food and beverage industry and it is rate-limiting factor for NPD activity. Therefore, the short-term microbiological risk assessment is essential for the further enhancement of NPD activity.

 

食品・飲料業界において、微生物リスク評価には通常数カ月の時間を要し、新商品開発活動の律速要因になっている。 それ故に、新商品開発活動の強化のためにも、短期間で微生物リスク評価を判断できることは極めて重要である。

 

Key success Criteria

A successful solution will be able to detect the signals for microbial decline or growth in a liquid at an early stage (ideally within 1 or 2 days).

 

求める技術は、培地(飲料中味など)に植菌して初期のタイミング(=理想的には、1~2日以内)に発せられるシグナルを検知し、微生物の増殖無し・有りを判断できること

 

Possible Approaches
  • Qualitative and quantitative measurements of gene expression (stress-responsive reaction etc.)
  • Qualitative and quantitative assay for primary and secondary metabolites (alcohols, proteins, alkaloids or antibiotics etc.)
  • Other approaches that meet the requirements

 

  • 定性定量的な遺伝子活性測定(ストレス応答反応など)
  • 定性定量的な1次・2次代謝産物測定(アルコール、タンパク質、アルカロイド、抗生物質など)
