Suntory is looking for technologies, methods or models for microbiological risk assessment that can qualitatively and quantitatively detect, at an early stage in the product’s life, the various microbial signals which potentially occur and contribute to the product’s degradation.
In general, it takes several months for microbiological risk assessment in food and beverage industry and it is rate-limiting factor for NPD activity. Therefore, the short-term microbiological risk assessment is essential for the further enhancement of NPD activity.
Qualitative and quantitative measurements of gene expression (stress-responsive reaction etc.)
Qualitative and quantitative assay for primary and secondary metabolites (alcohols, proteins, alkaloids or antibiotics etc.)
