Suntory is looking for the technologies or methods that can capture the aroma volatiles that occur during production processes such as cooking and roasting.

 

サントリー社は、ロースターから排気ガスとして一緒に排出される、コーヒー豆焙煎中に発生する香気を回収する技術を求めている

 

 

Background

Coffee aroma, especially roasted coffee aroma is an important role for the product development of RTD coffee. By extending our knowledge on roasted coffee aroma, we are going to offer new and more delicious RTD coffee. Prime focus is coffee but solutions for other such as fruit materials area also of interest.

 

コーヒー香気、特に焙煎香は、RTDコーヒーを開発する上で重要な要素となる。 コーヒー焙煎香の知見を深めることで、新しく、更に美味しいコーヒー開発を目指すため

 

 

Key success Criteria
  • A successful technology will be able to capture at least 80% aroma volatiles from the exhaust gas.
  • Approaches that comply, or could be developed to comply, with food regulations.

 

求める技術は、ロースターより排出されるガスに含まれる全コーヒー香気成分の80%以上を回収できること

 

Possible Approaches
  • Aroma capturing by liquefaction
  • Aroma capturing by solidification
  • Other approaches that meet the requirements

 

  • 液化による香気回収
