Description

PepsiCo seeks new and novel protein sources for usage in their snacks and beverages.

 

Background

Consumers the world over have embraced a variety of high-protein foods, such as Greek-style yogurt and beef jerky style meat products. Unfortunately, that increased level of protein in the product can negatively impact consumer perceptions by adversely impacting texture, taste, color, etc.

 

PepsiCo would like to achieve a protein level that provides a measurable positive impact for consumers while enabling a comparable consumer experience.

 

Therefore, PepsiCo seeks either:

  • Novel protein sources
    • Plant-based or
    • Mycoprotein
  • Innovative processing methods to utilize any of the above protein sources

 

Key success Criteria

Must-Haves:

  • Primary focus: Plant-based protein ingredients
    • mycoprotein & insect protein could be options for consideration
  • Efficient delivery of good nutrition protein (high PDCAAS) is highly desired (e.g. complement grain protein with pulse protein)
  • Minimal flavor and texture impact
  • Process friendly for snack and beverage applications (e.g. extrusion, baking, homogenizing, etc.)
  • Evidence to show the unique quality of the protein or process

 

Nice-to-Haves:

  • Complete scientific research was done to prove the unique quality.
  • Non-GMO
  • Negligible flavor and texture impact
  • Other nutritional benefits to the source besides high protein content (especially if the level is claimable in the typical amount used in the application, e.g. 100% RDA of Vitamin E)
  • “Clean Label”
    • i.e. easy to pronounce and common (e.g. familiar, “kitchen” ingredients are highly desirable and avoid chemical-sounding ingredients) 
    • or at the minimum has a good sustainability story 
    • or other differentiation to conventional animal and dairy proteins

 

Possible Approaches

PepsiCo is interested in all approaches capable of achieving the performance stated above.

 

Approaches not of Interest

PepsiCo has done extensive work with the following:

  • Soy
  • Moringa
  • Khai-nam (“duck weed”)
  • Cricket powder
  • Meal worm powder
  • Pea
  • Dairy
  • Single cell protein
  • Insect protein

Additionally, PepsiCo wishes to avoid usage of dairy, egg, meat, and gelatin sourced protein.
