RFP Description

NineSigma, representing multiple leading companies is seeking technologies about innovative foods, ingredients or processing technologies that can reduce any of salt, fat or calorie intake.


In recent years, lifestyle diseases such as hypertension and diabetes have been recognized as health problem. Unbalanced diets and a lack of physical activity are pointed out as the main causes. However, meals with low salt content, low fat content, or low caloric content are not tasty. Therefore researchers have been carrying out various studies such as seeking materials to enhance flavors, processing technologies that make consumers experience a similar taste but with less food, and alternative materials with less salt, fat, and caloric content.


In this open request, we seek technologies about innovative materials and technologies than can achieve these objectives.

Key Success Criteria

Target materials or technologies

We are looking for the following materials or technologies that can reduce salt, fat, or calorie intake from meals.

  • Materials or technologies that can enhance the flavor of salt, fat, or calorie sources (carbohydrates, lipids, and sugar); such as flavors, seasonings, protein hydrolysates, or combinations of food materials.
  • Processing technologies of salt, fat, or calorie sources (carbohydrates, lipids, and sugar); such as helping the taste-causing substances to make contact with the tongue more efficiently
  • Materials that are alternatives to salt, fat, and calorie sources (carbohydrates, lipids, and sugar); such as natural sweeteners or plant-derived ingredients


In particular, we welcome materials and technologies with data that indicates the effect or proven mechanism of the action.



Possible Approaches

We anticipate proposals from organizations such as the following.

·       Start-up companies or small and medium sized enterprises that possess unique technologies

·      Research organizations that possess innovative technologies

Approaches not of interest

Methods of reducing calorie intake that work by decomposing the calorie sources in the body after ingestion are not desired.
